I mean, we know that smoothie bowls are super healthy. It’s an easy, quick and healthy breakfast. You just need to throw all the fruits into the blender and choose your toppings. Sometimes, when having it first thing in the morning, so much fruit sweetener can make me a bit tired. So I’m always looking for ways to make the smoothie bowl even healthier and to find combinations that still taste amazing, but also give you the perfect start to the day.
As beetroot is one of the healthiest vegetables you can eat, I wanted to have it in my morning bowl. Plus: the colour looks incredibly cool and pink is said to trigger a good mood and have a reassuring effect on you. Exactly what I need in the morning 😉 .
The week has been amazing so far: every other day we jump into the sea and go for walks on the beach. This is a dream come true. Ever since I was little I love the water and especially the sea. It has something really magical for me. When I feel bad, I have headaches, or other physical pains, I mostly have this deep desire to jump into the sea. Really every time I then do it, I feel so much better afterwards. As if the sea washes every load and pain you carry away.
Tomorrow we are flying to Germany for a couple of days. I know, it is not sustainable and we usually don’t fly, but we are going to a funeral. That’s clearly an exception. I don’t judge every person who flys. Some really don’t have the choice. For me, it is in particular important to be aware what we are causing when we fly and that we double check the need of doing it. Even better would be to compensate your flight. When it is just for fun and holidays I really think that it definitely has to change how often we fly. I know people who fly every other week just for city trips or a quick beach holiday. This honestly makes me a bit sad and angry. Climate change is endangering our earth and we continue being selfish instead of changing our own behaviour. Instead we always reason and justify our behaviour with common sentences like: “everybody is doing it, it makes no difference if I stop!”. But it really DOES! So hopefully more and more people recognize this and we are able to find our way out of the mess we ourselves created.
SERVES: 1 big bowl
½ baked beetroot*
½ big banana
4 ice cubes
1 tbsp chia seeds
125 ml plant based milk
NOTE: *The night before I baked the beetroot wrapped in aluminum foil at 200ºC (upper and lower heat) for 1 to 1 ½ hours depending the size. I let it cool down and then stored it in the fridge overnight. I always bake 4 beetroots at a time, each wrapped in aluminum foil, so I can use them for salads, bowls and other dishes.
Just throw everything into the blender and blend on high speed until you get a thick smoothie.
Pour into a nice bowl and top the beetroot smoothie with granola, chia seeds, cocoa nibs and red grapes. I used the granola recipe I have on my blog, just without the nuts and seeds.
